Australian Royal icing Recipe

Ingredients :
1 egg white ,room temperature
10 ounces ( approximately) pure icing sugar,sieved
1/2 teaspoon lemon juice
Method :
place egg white in bowl and add the sugar, a tablespoon at a time,beating well by hand after each addition. When mixture has consistency of thin syrup, add the lemon juice, and beat for two minutes.
Continue adding sugar, a spoonful at a time,and beating after each addition. When the icing is firm enough to hold a peak on the back of the spoon it is ready for use,and you have used enough sugar.
This usually takes 20 minutes of hand beating, never beat this icing with an electric mixer as it may cause too much aeration. Tint as desired with liquid food colour, added sparingly, a drop at a timestore well covered in an air-tight container.When in use, keep covered with a damp cloth to prevent crusting.
